To make Sooji Halva, gather half a cup of fine semolina (Sooji), Half cup of Ghee (clarified butter), and Half Cup of Sugar, One cup of water, Cashews and raisins, and half a teaspoon of Cardamom powder.
Heat ghee in a pan over medium heat, add Sooji, and roast it while stirring until it turns golden brown.
While the Sooji is roasting, in another pan, bring the water and sugar to a boil, letting it simmer until the sugar fully dissolves.
Lower the heat for the roasted Sooji, then slowly pour in the hot sugar syrup while being careful of splatters, stirring constantly to prevent lumps.
Raise the heat a bit and cook the mixture until all the water is absorbed, which will take a while, so stir patiently.
Once the halwa thickens and becomes fragrant. Add the cardamom powder and stir it in.
Garnish your halwa with chopped cashews and raisins for a festive touch. You can even use other nuts and dried fruits if you like!
